I've seen a few people doing varying dances, and was wondering how you did it?

just type /dance in the chat window and press enter.

Each gender in each proffession has a unique dance.

there are also special dances for sins, rits, paras and dervs if you have the factions / nightfall collectors editions

If you have collector's edition of a game which activates new dances, you type /dancenew.
